In Eorzea, the tradition comes to us from the northern city-state of Ishgard, which has seen some of the deepest scars in its war against dragonkind. The battles left many children orphaned and alone, and while official word was that the knights were not to take any action, there were those who could not stand such a state of affairs. And so, they snuck the children into the barracks under the cover of their red coats. Thankfully, the battles that had seen so much devastation eventually came to an end, and the matter was largely forgotten- until such time as those children grew up and gathered together to pay tribute to the knights who had aided them. In red coats of their own, they passed out gifts to the children of the realm, and so it continues to this day.
