[Old habits die hard, even in any of the archived footage from the simulation area of that training floor back at SOLDIER, Sephiroth very much knew the difference between a friendly spar and an actual battle. Except on the rare occasion where Genesis might have stepped over a line, he's ever mindful of the skill level of the opponent he's playing with.
Curiously, he too finds himself frowning as Cloud brings the two weapons together, pondering what the blond would try, until he registers that click-sound. SOLDIER claymore is indeed the first thing that springs to mind as Cloud brings the combined weapon in front of himself and stances, preparing for whatever he'd be throwing next.
He only had that second to recognize that leading move, but as Cloud spins and Masamune is dropped alongside a backed-up-timed-crouch in order to get the block, Sephiroth grins between the blades; not that the moment in time lasts long at all before they're back to exchanging strike for parry, block for counter.
As it goes on, they do seem to be more evenly matched than Sephiroth had counted on, and it's clear that he's enjoying it.]
